Kelly and Barbara Green founded this Texas-style barbeque restaurant in Loveland, Colo., in July 1997.
The couple wanted to serve up authentic Texas eats, so they set out to find the best barbeque recipes the state had to offer. Kelly and Barbara threw in some of their own touches to come up with the tasty fare you now enjoy at BBQ BOB'S. However, the meaty Cowboy bean recipe is uniquely Kelly's, and the zesty coleslaw recipe is all Barbara's.
All the meats featured at BBQ BOB'S – beef brisket, pork shoulder, ribs, chicken and Polish sausage – are slow-cooked in the pit out back using mesquite, hickory, apple and cherry woods. The beef and pork spend 12 hours in the pit, cooking low and slow, to produce the juicy, succulent flavor you will enjoy every time you visit BBQ BOB'S. It's a true taste of Texas.
